
Once my sister-in-law was home visiting and I asked her to stay for dinner. She asked what’s cooking ? I said chapati and chicken curry; but will take some time as the chicken pieces have only been marinated and the curry is yet to be made.
She said there is an easier alternative – sliced onion, curry leaves and the marinated chicken, only three ingredients needed – put the trio in a non-stick kadai laced with coconut oil and let it cook. In less than 30 min, you have a tasty chicken dish. No water needed as the chicken will stew in its own juices, only make sure its low flame and do not forget to stir the chicken pieces once every 10 min. There is no name for this chicken dish, lets call it an easy chicken roast; I make it often as it is easy and tasty.

The marinade consists of salt, turmeric, normal red chilli powder and kashmiri chilli powder. The kashmiri chilli powder is low on heat and adds the reddish colour to the meat; if you use only the normal chilli powder, the dish will be too spicy. I usually marinate the chicken in the morning, keep it in the freezer, till its time to cook it in the evening.



The lady’s finger stir fry is an easy to make and tasty dish. Once the mustard starts to splutter in the heated oil, add the onion, dry red chillies, onion (or shallots), and curry leaves and a pinch of turmeric powder.

I like to cut the lady’s finger lengthwise – 1 inch pieces cut into halves, many prefer to cut it round though.

And finally for gravy, I make a mushroom curry. Discovering mushroom in any dish makes it a bit more exotic for me. I use the button mushrooms. The gravy base is the usual – onion, ginger, garlic, tomato and the masala mix. I also add some coconut milk made with the coconut milk powder mix.
