Rainy days…makes me languorous and hungry. Want to make something tasty but with minimum labour. Something easy to cook and packed with flavour – prawns come to mind. They are very versatile – fry them, curry them, add them to soups, salads or even make a meal out of them – prawns pulao will be the dish for today.

A super easy meal – Set #3 – Prawns pulao, Curd salad, Coconut chutney, Pickle and Pappadam. And the ideal day to cook this would be a Thursday…?

If I ask the kid, which is the worst day of the week, he would say Thursday. And the reason being? “When you reach Thursday, you know the weekend is close; but then you realise that there is still Friday to go. Friday is a great as the weekend follows, but not Thursday.” Couldn’t agree more.
I use Basmati rice for the prawns pulao and Basmati is always special and this makes Thursday more tolerable π

The prawns, rice and the masala are separately cooked and mixed together for the pulao. The prawns are marinated with a mixture of salt, turmeric powder and chilli powder and cooked.

The masala consists of chopped onions, a paste of ginger, garlic, green chillies and dry red chillies (go easy on the chillies as their heat becomes more pronounced since they are ground to a paste with the seeds) and chopped tomatoes; finally a sprinkle of turmeric for the yellow colour.

The sides are easy to do. The coconut chutney consists of grated coconut, shallots, green chillies, a small piece of ginger and salt – grind all the ingredients together in a mixer bowl.

The pickle is store bought. And the pappadam is a must for the crunchy bit.
